Fermentation is halted earlier than is the case with regular Sake and this allows more sugar to remain. A secondary fermentation takes place to produce carbonation. Flavours are described as peachy and like lychees with some varieties.
Our favorite is ‘Hana-Awaka‘ by Ozeki Co. Hyogo Prefecture, Japan
A strong burst of sweet fruity flavours is balanced with a slight acidity in the finish. Playful hints of cherry blossom flavour tease the palate. Light and easy to drink with roughly 7% alcohol content. Best served chilled with light meals or dessert.
